Hey,
Link galleries from NWBrickCon here. So far on Brickshelf I only see one from tgarriso, but the Flickr BrickCon pool has hundreds of pics from Dunechaser, Darkie, Joe Meno, Lonnon Foster, Tedward, and probably others by now.
Some of the great castle MOCs on display include:
Steve DeCraemer's Winter Home of the Happy Sunshine People
Another tour de force from John Langrish, the Nottingbley Castle
This great Ice Castle by Gary McIntire
The beautiful authentic corner cafe by Alice Leber-Cook isn't a castle MOC, but that amazing cobblestone technique is begging to be used by castlers
Joseph Evangelista's Black Falcons' Corner Tower
Josh's Bastion of Garda Tùr
Smaug's treasure chamber
This Viking village
A great microscale castle hiding in the back of this pic (does anyone have a clear photo of this?)

Just upped my (few) pics to the flickr pool. A few addendums to the above:
Smaug's Treasure Chamber was built by Richard Lange (Blue Knight) and was the runner-up for best of show.
The Viking Village was built by Justin Major, Thomas Garrison, and Jon Rasmussen.
Also, don't forget Steven Panuel's (sp?) crazy big castle that's name escapes me right now...
