Hi lads al& lasses. I would think that you would need bunks for only a third of the common soldiery. At night, some could sleep in the great hall or other places. Maybe two to a bed where mini figs not to big or are young uns .Castle women could bunk together or sometimes maids in the lords [whoops did I say that] or their ladies rooms.Then there's the stables or the kitchens.
Peasants make up a fair proportion of medieval life but you don't see many in MOC's.
Probably keeping their heads down or keeping out of trouble . I hope, insh'allah, to construct a medieval village with appropriate range of buildings with basic sleeping accommodation. Even a mini fig deserves basic human shelter. :D
Outlaws live pretty simply and differently from villagers or castle folk. Cheers.
PS You could probably reduce the soldiers/h'hold guards to around 12 or 15 in total ? Other soldier levies would be part time anyway [in time of conflict]. Any tavern would be simple and tiny for a village. Stone castles were an enormous expense for small noblemen so money saved on troops is important. A barracks outside the Castle/Manor ? wouldn't seem necessary . If you keep the household small it would work better don't you think ?

Dwarves, linkers, knights and squires.

Sheriff or jailer, executioner.

Possibly a cardinal, bishop, or priest, depending on whether this particular town has a diocese (and how large it is).

Barrister, bookbinder, miller, cooper and a tanner.

A chocolatier and a toymaker.

Magnates and at least 1 high councilor to the Lord, preferably on the lawful evil side of things.

I've researched this topic as I've had great difficulty in accommodating sufficient beds into my [small] castles. I've discovered that For around 75% of Middle Ages, all people either slept on the floor, on benches, or near the fire. Most on benches slept sitting up, wrapped in cloaks. Only lords/lady daughters slept on a bed, possibly with servant in same room. If important knight raised levy of 50 men, around 2/3 rds would be local levy ?
So assuming a small castle of 22 [including 5 villagers], at night you need to sleep around 16 less 4/5 guards [including 1/2 [remaining]villagers], leaving about 13 sleeping . Thus 3 nobles/1 bed,1 servant on floor ; leaves about 9 to sleep,sitting on bench/lying near fire . I've made bench 22 stud by 2 stud, seating 4. So, 1 bed ,couple of benches,problem solved . [You may sometimes need 2nd bed for visiting nobility] . :)

For [approx.] 22 daytime castle mini figs, I think : lord/lady/daughter [= 3] ; 1 steward, 1 master at arms, 1 cook, 1 smithy/armourer [=4] ;
Leaves 15. So 3 servants [one to assist cook] , 2 sargants , 10 men at arms [including archers etc]. [One of these may be master of horse ? ]
Other specialty types may live in nearby village or within the shire . My long term goal is to build a diorama to include small castle [as above], village and surrounding fields, once sufficient Lego becomes available . Ciao , David :D

Wow! very well written and thought through. I made a mistake of applying a large castle realities to smaller keep.

Thanks Ludzig. For a larger castle, you would need several beds for the Lords family [E.G. Baron , Sheriff etcet. ,important guests but not many, I think. Specialty types such as bards, priests, others again wouldn't need beds and often just visit for a short period. Horses need a stable but some could graze outside the walls presumably ? A kitchen/storeroom may be needed I think . I'll have to save up for grey bricks before I can build a realistic castle, insh'allah . Ciao David .
