I have a butcher, baker, blacksmith, keymaker, glassmaker, scribe/mapmaker, gold/silversmith, armorer, mason's guild, Large Inn, seamstress, miller/mill and a Baliff. In the works are a chapel and a few hovels, most of my village houses are for the moderately well-off. Yes all the houses listed are built and are almost ready to start making into a village.

Working on a stable, inn, ten houses, church, sheep farm, weaver, tavern, dockside warehouse, and some year a castle. The town square will have gallows.

My city is a little small...
There are just a blacksmith, an inn and an alchemist...
I have use the blacksmith to make 2 buildings (my inn and the blacksmith) and I have build the house of the alchemist with other bricks but as I do not have much of it especially blue bricks for the roof, I cannot build anything other...
I should buy another blacksmith on Shop At Home...

I'm terrible about giving any building an actual purpose. Out of the 24 buildings I bring to a layout, I have 2 blacksmiths, 1 bookshop, a tinker/jeweler, 2 homes, 1 pub, & 1 boarding house.

Im still in the process of creating a City-State. But its so large that I'd have to finish the walls first before I can build any civilian structure. Actually I have this one 3-level house, but its under redesign.

A couple houses, a church, a merchant stall, weaver's shop, and a blacksmith. Not to mention my personal house, which (althought not in the layout) is the only one I have pictures of now:
